This Red Lentil Soup is creamy even without any cream added to it. It is a simple comforting soup that goes well with any meal. Serve it for breakfast with toast, or soup for lunch or dinner. The addition of different kind of vegetables makes this soup filling, and thus worthy for a meal. Serve it with sandwich or salad, or have it on its own. I got you covered.
Blogging my seem like an easy thing to do but in reality it takes a LOT of time to finish a single post. In my Take a Peek at the Behind The Scenes of Food Blogging, I shared with you my process when creating a post. Although it takes a lot of time, it gives me a lot of joy doing thing. Blogging keeps me sane 🙂 and help me balance my life between work and personal time. I love sharing recipes with you as well as my travel escapades. I had been busier lately with work and I started making my meals on the fly, you know whatever I have on hand. Something that I do not have to plan just like when creating a posts for the blog. I thought I would create a short post about this, not as elaborate as my full post but enough to give you idea on how you can make it at home. This will be easy and quick recipes that you can make in less than 30 minutes max or even 5 minutes less. We all need a short break from the kitchen, but that doesn’t mean we have to stop making delicious meals to nourish us.

Today’s Quick & Easy Recipe
Red Lentil Soup, that’s what we are having today. Lentil is a good source of protein and it can be use in different ways. You can add it to stew, grains, salads, burgers or use it for soup like this one. There are different kind of Lentils. What I always have on hand are dry red and green lentils. Both of these have different texture when cooked.

I personally like using red lentils when I need to make something quick. Red Lentils cooks quickly which makes it perfect for a busy day meal. Because it cooks faster, it has the tendency to be mushy and soft which is a perfect texture for soup and stews. It makes the soup and stew thick without the need to add any cream or the need to make a roux.

This soup is so easy to make and also great for make-ahead. If you have time, soak the lentils. I often soak the lentils overnight when I plan to make the soup the next day. Soaking helps cooking faster and also helps in easily digesting it. You will notice that the lentil will almost double in size once it is soaked. If you do not have time, just make sure to at least rinse it couple of times. Cooking time will a bit longer but still fast compared to other soup.

All you need to do is to simmer the lentil with all the ingredients until the lentil is mushy and soft. You can serve it chunky, but I like mine smooth and creamy so I turn it into a purée. I used immersion blender but when I am making a large batch I use a blender to purée the mixture. That’s about it. You can add cream or non-dairy milk if you want to keep it dairy free. Coconut milk is a good one to use. You can also keep it as is, no added dairy. I like to add spoonful of yogurt on top when serving it or add veggie meatballs to make it more filling. Take it as your own, garnish it with what you love, serve it with what you like. Enjoy it, it’s your soup after all.

Ingredients:
- 1/4 cup Red Lentils
- 1/4 Large Red Bell Pepper
- 100g Carrots
- 1/4 Large Yellow Onion
- 3 cloves Garlic
- 1/2 teaspoon table Salt
- 1/4 teaspoon Black Pepper
- 1 teaspoon granulated Sugar
- 1 1/2 cup Vegetable Broth
Instructions:
- Wash the lentil. If you have time, soak it overnight if you plan to make it the next day.
- In a heated pan, add the onion, garlic, carrots and bell pepper. Sauté until the carrots are soft. Set aside small amount for toppings.
- Pour the vegetable broth. Add the lentils, salt, black pepper and sugar.
- Simmer in medium heat for about 20 minutes or until the lentil is soft.
- Blend to purée or use an immersion blender for easier process.
- Transfer in a bowl topped with vegetables and a doll-up of yogurt. Sprinkle black pepper and garnish with chopped chives (optional)
Serves 1 – 2
