Homemade Dulce Deleche Ice Cream – Custard Base, No Ice Cream Machine Needed

I so love this Dulce DeLeche Ice Cream so much! It’s so creamy, so smooth and it’s proudly homemade without even using any ice cream machine. How is that to start with? I am obsessed in making homemade ice cream, I make them almost every week with whatever flavor comes into my mind. If you subscribe to my website, you might have seen I shared my Mango Custard Ice Cream last month, and now this one. We cannot have too many ice cream recipe especially with the weather is hot.

Dulce DeLeche Ice Cream

I’ve made quite a lot of homemade frozen dessert lately, but when it comes to ice cream, I often make the whipped cream based ice cream. They are the easier homemade version, quick and easy. But sometimes, it’s always worth going an extra mile for something special, like this custard based Dulce DeLeche Ice Cream. I thought this would be a better version because Dulce DeLeche is sweet and the custard base will somehow balance the sweetness of the ice cream. I am going for something with a light caramel flavor, but still with the same smooth and creamy texture.

Dulce DeLeche Ice Cream No Ice Cream Machine needed

Well, this ice cream definitely have it all. The caramel flavor, the smooth and creamy texture with just the right sweetness. This is just the perfect texture I have in mind because I intend to pair this with my chocolate custard cake.

Lets Make the Custard

A custard base ice cream needs a custard, so let’s make it! Homemade custard is easy to make. You will need few basic ingredients like egg, sugar and milk. You can use this custard for pie or tart filling, or for cake frosting. have a look at the video to see how I made it.

How to Whip Cream Successfully

Making a whipped cream is one of the must and basic thing that you should know if you are into baking. Whipped cream  can be used in cakes, cupcakes, pie, tart, ice cream , frosting and many more. You can of course buy a ready to use whipped cream or just make your own. Although, it is so simple and easy, it is easy to fall into the trap of over beating it, thus ending up with a butter rather than a whipped cream.So, how long should you beat it and when should you stop beating? Let me show you how. Let’s get started!

Salted Caramel Ice Cream

If you are not into caramel flavor, I have other options that you could choose from. These are all homemade and no ice cream machine needed.

Ingredients:

  • 1/2 cup Dulce DeLeche or Homemade Salted Caramel Sauce – If you want a stronger caramel and sweet taste, increase the portion.
  • 1 cup heavy Whipping cream
  • 1 batch Custard Pastry Cream
  • Homemade Salted Caramel Sauce – for drizzling (optional)

Instructions:

  1. Make the Salted Caramel Sauce: It is advisable to make this at least 1 day ahead to allow the consistency to thicken. Get the full recipe HERE, or you can use store-bought
  2. Make the Custard Pastry Cream: Just like the Caramel Sauce, make this at least 1 day ahead and refrigerate.
  3. Add the heavy cream to a large bowl. Check How to whip cream successfully for tips on how to do it. Using an electric mixer set to medium speed, beat until stiff peaks form. Turn the speed to low and slowly pour in the Dulce DeLeche or Homemade Salted Caramel Sauce and Pastry Cream. Turn the speed back up to medium and beat until thickened.
  4. Transfer to a freezer-safe container. Cover top with plastic wrap making sure the plastic touches the top of the mixture.
  5. Freeze for at least 6 hours, overnight recommended.
  6. Scoop and serve with Homemade Salted Caramel Sauce (optional).
